I'd like to power 4x 18" FI, but I do not go high SPL - so high watt is not important.
However, I heard the EP4000 has a loud fan. And I do not want to void my warranty by changing it.
Can anyone suggest another amp, please?

The Yamaha amps are thought of highly, and they're reasonably quiet. You could always get an Emotiva fanless. Good enough for the Octagon,....

Does it at least turn off like my plate amp does, if it doesn't get a signal? (Auto on/off)

Nobody minds a little extra noise in the laundry room. It's still perceptible through the insulated wall, but only just. It's nothing compared to plasma buzz. The Behringer amps don't have auto on/off functionality built in. But you can easily add this function on your own. There are several ways to do this. I chose to just create a switched outlet for it that's live whenever my receiver is on. It probably cost me 30$. It'd be closer to 10$ if your processor already has a 12V remote signal.

I've seen Samson recommended as a very quiet amp, but I don't know the first thing about Pro amps. Any recommendations? Specifics please.
I'm using a pair of Dayton IB385-8 15"'s in parallel for each side (7.2, so 2 LFE's, one left & one right). and would prefer to rack-mount something ultra-quiet and low profile (size and looks). While I'm at it, I'd like to maintain stereo separation for the LFE's (even if most content is 5.1) without having to buy two separate amps.

These are pro amps, the only to cycle most of them remotely is trough the use of an aftermarket remote switch or a device called a sequencer. Some of the newer more advanced (and usually more expensive) pro amps can be triggered remotely but not the old school EP4000

I'd examine what Yamaha has to offer.
They're great, high quality amps. They're reportedly very quiet, very efficient. The P2500S is rated at 310w per channel @4ohms, seems like a good match. That said, I'm not first hand familiar with those drivers. But 155w each seems compatible, ... but I'm guessing those drivers are limited in their handling, ... Thomas?

PE derates the power handling of their IB drivers by ~40% when used in an IB.
I have no info about the current line of amps offered by Samson
