I found an unbelievable deal on a QSC PLX3002 amp but it is clearly well more then double the power I need. Would there be any issues running this amp even though it's rated at 900W/ch into 4 ohms? I only need 300W/ch or so... Would I cause damage to my sub even if the system is properly calibrated and I kept the gain down a bit?

Nope, having more than enough power is fine. That's the amps power capability. It will provide cleaner power to the sub anyway, if the sub reached its max power and the amp still was under its rms rating there will be much less distortion from the amp as it is not being taxed as much.
Go for it.
People routinely power their prosound gear with as much as double the reccomended power just to get this effect!

I'm running my EP1500 bridged mono to my two Mach 5 - 18's. I believe it is 1,200 or 1,400 watts.
